    35 day dry aged prime 109E

    Here are some pics of the prime 109E that I dry aged for 35 days in my home set-up. Cooked a few of the rib eyes on
    Sunday. Not a bite left on anybody's plate.

    That's a good lookin' hunk o' beef! I bet that tasted real good.

      I guess 109e removes the cap or the spinalis. I usually look for a 109 or 109a and remove the spinalis and make pinwheels. I don't have a nice cabinets like you but do the Umai bag thing for 28 days. Yours came out perfect, I like the way yours looks compared to bagging it.

        Looks mighty fine. Good looking aging cabinet. You will definitely get some great meat from it. Prime 109e is fine by me look at all the marbling you have.
