4lb flat... Pastrami or just smoke it?

    4lb flat... Pastrami or just smoke it?

    So I grabbed a flat and part if it is getting ground together with some chuck for burger meat. But that leaves me about 4lbs of the flat. So.. what should I do with it? Help me choose!

    Hmmm 6-2 for pastrami... Kind of the way I was leaning. (makes room in the fridge)

      I voted for smokin' it. I just got pork ribs on the grill and I am feeling lazy. Smoking it is easier than curing/brining and smoking it. Also the rewards are quicker!

      True. One of the issues for smoking it is that it's just me. Also.. ribs... mmm.....
