    Thinking of smoking corned beef hot and fast.

    I've never tried this but I think I'm going to give it a shot. When it's done and in cambro I'm going to smoke a gorgonzola stuffed cabbage to go with it.

    Sounds awesome! I just made coleslaw. 😑 Put two corned beef flats in the cooker at 9a. Pit temps only around 250 but they're at 150 already. Hoping they stall out for a bit before marching on to 200. Dinner's still a long way off!

        I'm a hot and fast convert! Going to wrap with butcher paper instead of foil for the first time today.

        It turned out great. I also did some Hasselbeck potatoes and basted both with salted butter as they smoked.
