i am picking up a fridge/freezer for the garage this weekend. Goal is to use the fridge for dry aging, brining, curing, etc. I have seen several posts about the smell that develops when aging using umai bags. If I am aging some beef and decide to dry brine chicken uncovered on a rack at the same time, would that slight funky smell affect the chicken?
I can't smell anything from my 20 lb 4 week aged boneless rib roast (I'm going for 6 weeks) in the fridge now, in Umai. But, I also can't hear or pee well either, so who knows....🤔
