    Smoking A Brisket Flat Today

    Good Morning , IT`S a cool -17c with a wind chill of -24c . decided to do a brisket flat , Peach Bulleit Bourbon baked beans with
    chopped pulled pork and marinated baked potatoes . later tonight I will send pics . pit barrel is staying between 275 f to 300 f
    wrapped with welders blanket been cooking since 8:30 am , brisket temp is 154f . The brisket flat weight was 6 lbs . The beans
    is a new recipe , i created , it will be a good test with the family today . the rub i used on meat was equal parts of kosher salt
    16 mesh black pepper , touch of granulated garlic and touch of Kosmo`s Cow Cover Rub .

      turned out good, the brisket flat could of turned out better , family was happy with it .

    I've found that whole packer briskets in the 14 lb range (prime grade, from Costco) produce the best flavor and jucieness of any brisket I'm willing to buy. I haven't had the same success with brisket flats.

      I have to agree with you , We buy 12-14 lb tripple a angus full packers . We picked up the flat at a sale price .
