    Cooking today: Plate Short Ribs

    Fired up the Rec Tec 700 early this AM - 225F

    Placed a rack of Plate Short Ribs from Devon Ave. Meats in Chicagoland on the cooker after letting it sit in the fridge overnight with mustard slather and rub.

    When I hit about 160F started spritzing mixture of 1C Apple Juice/1C H20/ qtr cup Apple Cider vinegar / 2TB Trappeys Hot Sauce / 1TB Worcestershire

    In progress now @ about 166F and making savory polenta to go with it while I tune in to the Bears!

            The butcher provided "Prime" short ribs (assuming entry level Prime) and I understand that makes a great difference in short ribs and briskets......well heck I guess Prime is usually preferred if the cost is not too painful.

              My butcher only carries certified angus, I can vouch for it’s quality, same if not better than prime

                  I’ve found an excellent source of quality beef short rib cryopacked plates at Whole Foods, if you happen to be near one. They cut them up into 3” bite size pieces for Korean bbq and what not. I just talk the meat cutter into selling it to me whole in tha package at a reduced amount.
