Finally found a blend for meatballs that I actually liked. I did a Fresh grind of chuck steak, veal breast, and pork butt (6 lbs in total 2 lbs of each meat). Now for the binders:
- 8 eggs
- 5 cups seasoned Panko breadcrumbs soaked in milk (squeeze out excess milk after soaking for a few min)
- salt and pepper to taste
- about 1/2 cup freshly chopped parsely
- 4 cloves freshly crushed garlic
- 3/4 cup of grated reggiano cheese (can use whatever you like).
I baked a bunch and threw some in the sauce, they were a hit.
