Deboning a brisket was a lot easier than I imagined and did not take as long as I thought it would. It doesn’t work out cheaper than buying deboned but the big plus is that the final product is far better than 90% of the cuts I’ve bought. I can only imagine not much care or respect is taken when the butchers have worked the meat. I will from now on be deboning my briskets.
Normally a brisket is separated from the rib cage and does not contain bones. If the animal is hanging you can pretty much rip the brisket off by and just need a few small cuts.
