Great write up! I am fired up to do one this weekend. I have done a couple TT's and really liked them, now I want to try your dry rub and baste. One question though, how are you getting the dry rub to stick? Especially curious as I have not had much luck getting rosemary bits to stick, much less with mopping multiple times. Thanks!
I spritz one side with water then apply the rub. Wait about 10 minutes for rub to tack up, then flip and do the same to the other side (don’t forget the edges too). The rosemary will stick. The OP’s rub is a good one!
