Just to clarify, Noah's rubs have a lot of salt in them. The dry brine technique is intended to be used with rubs that have no salt. So don't double up on your salt - if you are using the PBC rubs, just use the rub itself as the dry brine. A lot of people will probably tell you that a tri-tip just needs salt and pepper though.
