    Next up.....brisket!

    A good friend offered to show me how to cook brisket and serve it! We play music and fish together. Tonight we jammed ( I drum, he sings and plays lead guitar), and prepped the brisket. Went on the Big Green Egg at 225. Tomorrow while it cooks, we beach fish for pompano, jam a little, then feast! My kind of weekend!

            Thanks! Pompano run the beaches this time of year and they are awesome cooked whole on the Q! Next catch I’ll post up a recipe and cook!

But I did learn about a great remote temp monitor. My friend kept getting text messages with the brisket temp. What app? It was his dear wife sending texts with brisket temp while we drank beer and fished. So, no fish, we proceeded to plan B (Brisket!).
              The brisket came out great, I got a lesson in cutting it up, we put what he called the burnt ends in a batch of triple threat beans and served with salad while watching a Tom Petty video filmed in hogtown (Gainesville FL). After that we had anorher 2 hour music jam.

              While eating the brisket I commented that I don’t think I ever had brisket before, it was quite a treat and next one will go on my Camp Chef pellet smoker!
