Well let's go ahead and bump this along friends, Romans and countrymen. I don't know how I managed to miss this entire thread, but what a great post on something I've been meaning to record for some time. I too am an Umai junkie and love the results, just have to try it to believe the difference. Started a 13.9 pound ribeye about two weeks ago;

Red gold right there! I saw on SRF today they are selling dry aged steaks now. A 2lb bone-in ribeye was $99, I think it was 35 day aged. So there we go. Pay $99 for one or $118 for an entire loin of goodness!
