                  Nice TT! Best thing you can do to TT is lay some smoke to it then reverse sear on the open flame! The only way I get TT's here is to buy by the case from the food service company. I don't mind having a case of them in my freezer at all!

                    Funny, down in my area near Galveston, I get tri's at my local HEB. Seems like they are always out. The butcher knows to save me a good 3 pounder when he finds one.

                      Best all around beef flavor there is in my opinion. I like to cut mine into steaks and sous vide and sear. It's like a sirloin on steroids.
