    Let's hear it for Brisket

Great way to spend my Sunday! 10.44LB Brisket, Salt, Pepper, 250 Degrees, 8 Hours, wrapped after the stall in butcher paper. Super moist and tasty! 1/2 Hickory, 1/2 Oak.

I was looking at your cooker and the latches on the door. That cooker is what, a quarter inch thick right? Does Lang think that door would accidentally blow open? Or is the picture just shot on a weird angle or something?

Yes it is actually very thick and heavy duty. Keeps heat and smoke from escaping

Love the high heat success. I often don’t have time for a 12 hour cook. I need to try this.
