    Brisket Getting Done Quicker than Expected

    Brisket temp is 187 and I have to take a family member to doctor in 2 hrs.

    Thinking I should lower pellet smoker to 185 and finish when I return home.

    What would you do?

    Wrap it, get it quickly to probe tender then put it in Cambro or Warm oven.

            Well this is what I did and what I learned.

            Lowered temp for about 3 hours went to Dr and then pharmacy. On return cranked it back up and finished it in about hour and half. Wrapped and put in cooler for a couple of hours.

            Came out better than I thought it would. Passed the tender test, but flat a little on the dry side.

            I usually use a Weber Smoker but the pellet feeder temp must have been on the hot side. Knew I was in trouble when I checked on it after about 6 hours and temp was 160 and decided not to wrap in foil and/or butcher paper. Pellet smoker might be great but not familiar with using it. Meat did have good bark and good taste. Next time I use it will be for a pork shoulder so I can monitor it closer. The smoker was set at 225 but temps would fluctuate about 20-25 degrees and this with no wind.

            I’ll never ever start BBQ unless I have the time to do it properly.

                      Totally agree. Trying to mimic what went right last time is like "herding cats"!!! But oh so much fun!
