So, lonnie mac and other users of Umai bags for dry aging: Have you ever tossed the meat in the freezer for week, then partially or fully thawed before putting them in the bags? I'm going on a road trip tomorrow.
I have not, but see no reason it wouldn't work just fine that way. Or just put them in the dry bag and let them start aging while you're gone. Or, if they are in cry bags, just leave them in the fridge and dry bag when you get back... Lotsa options and they should all work fine. Enjoy!
