My better half bought a 5lb tenderloin yesterday because I said I was hungry for lean beef and I have to stay away from grease and fat for awhile. Sooo...after getting over the sticker shock of 12.00/lb I can't make up my mind if we should smoke the whole piece today or slice it into steaks. Any suggestions? What is your favorite way to cook tenderloin?

I would break it down by pulling the side chains and silverskin underneath. It kinda works like a pen inside a lid. All the parts that aren't fat or silver skin are very tasty for a stir fry or skewer. Then slice a few nice steaks and cook those as your main. It's a nice piece of meat that takes flavor well.

Cookers:
Broil King XL
Broil King Smoke
Weber Kettle 26
Grilla Pellet smoker
Capital 40 natural gas
Napoleon Pro 22 kettle
Thermometer:
Maverick 733
Thermapen (ok..4 thermapens)
Thermo works DOT (or two)
Fireboard (probably my favourite)
Thermworks Smoke (or two)
Accessories:
SnS (original, plus and XL)
DnG pans, 6 or 7 of these
Vortex
Grillgrates
and, maybe some other toys as well
Both ways are great, but I think I prefer the steaks. More room to season the outside of the meat.
