I bought one Wagyu from SRF and never will again, that $160 brisket had far more waste and wasn't any better than the $45 Primes from Costco, IMO. Totally turned off from that experience.

you will have a hard time finding this type of marbling in a commodity prime packer. This is SRF black ~17lb. I get them through a friend at cost so it makes more financial sense to cook them as I get them around $2/lb more than what I pay for costco prime. These were hands down the best briskets I have prepped. Cooked on KBQ with maple and cherry, West Coast Offense special- inject with BPS cattle prod, rubbed with BPS Cash Cow and Simply Marvelous Peppered Cow

I've cooked bunches of Snake River Briskets. I agree with Mosca on black vs. gold. I most always caught a SRF sale and stocked up with 4-5 briskets. This year I've been using the Flora Butcher briskets, which cost about $100. Sometimes the judges love my brisket, sometimes not. It always hurts when you pay high dollar and end up with a goose egg. But, with that said, on any given Saturday at any contest, a Walmart Choice can win top honors. It all comes down to cooking skills and meat selection skill. A wonderfully marbled brisket can be found in select or choice, with flexibility in the raw. By flexibility, I judge that by ease of touching ends of the brisket long ways.
