In my opinion, unwrapped brisket is the best. You get the ultimate in bark formation. That being said, you really want to make sure that you give it a good hold. NEVER skip that step, no matter what cooking techniques you are using. I consider that to be crucial to excellent brisket.
I almost never wrap my briskets any more. Let us know what you think.

I have 3 outdoor devices (plus a couple indoor items) Starting with the PBC, Faux Kamado Kooker,(Akorn metal Kamado) & Oklahoma Joe offset grill and smoker. I use the FireBoard WiFi Thermometer. IQ110 (heat control device for akorn) recently acquired a Char-Broil Big Easy TRU-INFRARED 3-in-1 Roaster, Smoker and Grill, I also have A Anova & Joule Sous Vide Wands and The Steakager ( a unit for Dry aging big hunks of meat!)
Ribs are amazing on the PBC! I am thinking about getting that hinged grill for the PBC I hate using so much charcoal for only a couple racks of ribs, so then I can do like you and add a brisket or pork butt!!

LION NATURAL GAS GRILL WITH ROTISSERIE
MAVERICK REMOTE THERMOMETER
BOURBON GUY. SUCKER FOR BLANTONS ON THE ROCKS
Went similar this weekend on my PBC- but I hung the full packer brisket and let the pork butt rest on the grate- surprised me a little as the butt took longer than expected. Anyone think it was because it wasn't hanging as I normally do?

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
