I purchased this whole brisket at Kroger this morning. The packaged date is not listed on the plastic package. I asked the butcher if he could tell me the packaged date, but he was not the least bit interested in walking to the cooler and looking on the box.
I wanted to know this so I can ​ "Wet age -The top competitors buy only whole packers vacuum packed in plastic. They find out the packing date, which is often on the label, and if it is they ask. They let it age 30 days or more in the fridge at temps between 35 and 38°F because there are enzymes in the meat that help tenderize it."
The "sell by" date is 07/08/17. Does that imply anything, at all, about when the product was packaged?
