    I dry rubbed the Tri Tip with paprika, garlic powder, S & P then sous vide at 132° for about 14 hours then seared over hot mesquite. Santa Maria salsa. Pinquito beans only native to the Santa Maria area. And grilled Garlic Bread.

      Hmmm... 14/15 hours in the Magic hot tub is perfect in my book! The Santa Maria grill would be a perfect searing station for that. It will taste and feel like Filet Mignon in your mouth.👅 Less time in the bath tub and it will be less tender. More time in the bath tub and it will become to mushy.👍

          My mouth is watering! I can't sous vide so I just grill my tri-tip til medium rare. It doesn't look as good as yours!

          Awesome charlesSFG. Love those pinquitos!
          I've always done my tri-tip on my wood burning santa maria-style grill, but just got a Joule during Amazon Prime Day.
          You've inspired me to sous vide+sear a try with it. Is 14 hours in the water the time you usually use?

          Let me add a plug for an old friend of mine (hope that's okay) Rancho Gordo Heirloom Beans. He sells Santa Maria Pinquito dried beans. All his beans are excellent and much fresher than any dried bean you will buy in a grocery store.

            Rancho Gordo's are indeed fantastic beans. I also get very nice pinquito's from Suncoast farms from Lompoc, CA at our
            local farmers market.

              Raichlen's book introduced me to tri-tip. Never saw it when we lived in Indiana. Moved to suburban Chicago, walked into a local meat market/deli in our village and saw it in the case! It has been our go to grilling beef ever since. Your meal looks terrific. Can't imagine how good it is SV.

              I love it. Tri tip is amazing. It's like "50 shades of meat." You can do anything you want to it, any way you want, just don't over cook it. This stuff rocks.
