    First cook on new smoker

    I am testing out my new Primo xl oval on a choice cut brisket (flat) from Costco. I have a friend who just butchered his hog and he sold me half, almost 200 lbs of pork in my freezer. So I just had to go buy a new smoker, no, my wife did not understand it, the old one, I just did not like much, it was a barrel on its side. I am following meatheads recipe for Texas brisket,(dry brined 12 hours) with his big bad beef rub, yum. I started early this morning and it just hit 150 and so I wrapped it in foil to get past the "stall". Thanks to all here for being helpful and the great information given. I am excited to smoke the 21 lbs of bacon I cured following other recipes I found here. Anyway I hope everyone is grilling or smoking on this beautiful Saturday. Have a great day all.

      Should be a good cook. Please post pictures! We've got storms keeping me away from my grill. Wish they'd come on work days instead of days off!

        Congrats on the Primo! I love mine. I'm going to make bacon soon too. Wait til you make pizza. You'll love it.
