Great vid, Lonnie ... thanks! FWIW, you're dead on re: chuck eye steaks. Thanks to my excellent local butcher, I keep a bunch in my freezer at all times. Pretty ones are grilled as steaks and the tire-biters are ground for the best burgers ever.
