Had a couple of brews to kill yesterday after work so I decided to break in my new Infrared Indirect and see how well it would reverse sear...

That gives me an idea... we need to create a handicap placard for our car showing a stick figure standing over a kettle...

but, back on topic.. those started on my RecTec with some hickory up to about 118 innards... and then walked over to the grill to be kissed by flame.... I like mine a little rarer than the princess does, so hers took more final heat.

I am the same except I tend to stay away from the deep end of the pool when it comes to done-ness... depends on the cut and the cook... enough beer cures a lot of cooking mistakes..
