Starting by rendering the trimmed fat cap on the brand new GMG. I'll add the "round"-ish trimmed roast at 225F until an IT of about 110-115. Then I'll fire up the Weber 22 to Mach 10, coat the roast with Beef Love and sear it.

It sounds like you've got this cook figured out. A little under cooked is better than a little over cooked on this roast. Remember there will be about 3° of carryover cooking after you pull it from the searing station.👍

Here's the GMG App settings. It will keep track of temperature until it gets "done" with the profile. If I don't pull it off before then, it will reduce the cooker temp to 150F and hold. Click image for larger version

Final product! Pulled off the GMG at just over 110F. Seared on the Weber 22 with SnS to Med Rare. Looks great! Thanks for the recipe and tips through the Pit! Click image for larger version

So, this turned out impressive on the table. SWMBO doesn't typically go back for more… she went back to the plate twice. Not much more applause can be expected!

Thanks again, AR, MH, and the helpful Sous Chefs in the Pit!

Outstanding!!!!! You must be super happy with that beautiful roast. And if I'm not mistaken I think I saw some beef ribs for another nice little meal I'm drooling now.
