Beautiful! That looks like you might have trouble eating it all.

The steak, fresh grilled Brussel sprouts and a 6 pack will go down just fine

Are you really cooking that on Sunday? That's a long dry brine. I'm already drooling

A 3 day dry brine seems to work best for me

Hahahaha, Yes!! And Two Labatts!! When I was a kid, my Dad would sit down at the table to a huge steak dinner with a 32oz cup of ice and two Labatts. This just took me back. Great looking cook.

The old Weber was hovering between 260 and 275 the whole cook.
When the streak hit 85 degrees I turned it over.
Took it of the grill when it hit 123. That took 70 minutes.
Let it set for 7 minutes while I stoked the coals.
Dried the surface and spread a little vegetable oil.
Then I seared for about 30 seconds, flipped 30 seconds more, flipped 30 seconds and then flipped for one last time and seared for 30 seconds to completion
