    Pastrami mooch and a weight brag

    21.42 pounds. I wanted 4 pounds off the flat for pastrami. Eye balled a cut line, cut, trimmed a little more fat, BAM 4 pounds. At 150ppm you need 3 teaspoons of Prague #1. 2" thick 5-7 days.

    Nice when that happens!! (especially when your simple minded like me makes it much easier to figure out how much Pink salt to put in!!) Bonus Points for the kool Scale!! I like that I do!
