    Good day for a smoke?

    Warming nicely, about 6 deg. C yesterday. Snagged a 5.5lb flat, dry brined over night, smoked, wrapped and cambroed. Thanks Meathead for the tips, came out perfect. Click image for larger version

              It's nice to see it's BBQ season in your neck of the woods.👍

              Don't you love it after spending so long to smoke a big hunk of meat like that. You diligently place it in the Cambro for a couple of hours to improve the end result, thinking I can't Wait to slice it!!! Then a couple of hours later on the very first slice you see that beautiful smoke ring...🙀 If that doesn't bring a great big smile to your BBQ face nothing will.

                Nice work! Trying my first cook on the new GMG today. Temps in the upper 30s and I'm not hitting the setpoint, so I'm setting it a little warm to make up the difference. May take a little time to figure it out. Thinking an insulating blanket is a good idea. Pics later over in the show us what you're cooking thread.
