    Prime beef ribs on the Kamado Joe tomorrow

    Stopped by Costco and saw prime beef chuck ribs being sold singly for like $8/lb. Asked if they had any uncut slabs or choice grade. Guy told me there were cryos of only prime. Turns out the cryos were 3.99/lb ! Plan to try some out tomorrow on the KJ classic. I guess the lesson is if you dont see something at costco, ask the guys behind the counter.......

      I was going to go with salt and pepper, but I remember I had some Oakridge rubs - Black Ops, Santa Maria, and Carne Crosta. I'll probably use one of those.

    Beef Ribs are FANTASTIC!

    I'm cooking 24 full Beef Short Ribs for a ministry friend on monday in Houston.

    Trimmed quite a bit of fat off them. Both had a thick fat vein running through. Left slab - Aaron Franklin style, salt, pepper, hot sauce. Right - Montreal steak, hot sauce too.

        Love the way they are pulling away from the bone. After cutting them up you should have some delicious, did I say delicious,yes I did, beef rib popsicles. Just grab the bone end and eat um like Fred Flintstone. Awesome.

          They were great. These werent even the big dino bones. Costco had chuck short ribs, what you really need are beef ribs from the plate.

          Ok, so they really were more like popsicles. Cool deal. I checked out your post cook pics. Outstanding. And just tossing in a corn bread too, making me jealous. Great job.

              EdF , They were great. The bark was a bit nicer on the salt and pepper one. The tabasco was strong. I didnt think I would be able to taste that after cooking when I watched Aaron Franklin do it, but it definitely came through. The montreal steak rub one was also very good, but I perfer the S&P only. The meat probed in at around 200 F. Perfect, not like pot roast and took some tooth to eat. Not much smoke flavor even though I added some big chunks of cherry. That is mainly due to the nature of the way kamados work. Finally, the Thermoworks Smoke - awesome. I like all the features and probably wont miss the Mav.
