    Love me a reverse seared steak

    Did these last night. Prime Top Sirloin from Costco. Total weight was about 2 1/3 lbs. Dry brined for about 90 minutes. Then added pepper, rosemary, thyme, garlic powder onion powder. 2-zone setup on the Weber kettle. Had a little trouble keeping the temp down - guessing too much hot coals - so did the low cook at about 260.

    Took 25 minutes to get to 95 & then I flipped them. At 115, I set them aside

    For the reverse sear, after spreading out the coals from the side, I put my Hovergrill with the legs folded right on the coals. I flipped often and it took just a few minutes to get to 125.

    ​Not a great pic below, but it shows the almost wall to wall redness that I'm looking for. These steaks are good eatin'

    Awww yeah! Before I scrolled far enough to see the third pic I was looking at the second and thought 'that's not much of a sear', then I scrolled and it was a beautiful thing! Way to go! The low cook matters very little what temp it actually is at, you did well!

          Thanks Gentlemen. Next up on the reverse sear list - I bought a full 15 lb boneless ribeye today. I'm going to process it tomorrow and probably grill a few steaks on Friday.

            We have no instructions on how to reverse sear a 15lb ribeye.... ha ha. Good score there! I would love to do that and make my own steaks!
