First time learning curve, it burned at a consistent temperature @275, I wanted a higher temperature for meatloaf, my meatloaf for 2 came in at just over 6#s, took 2.5 hrs. I used Blues Hog Tennessee sauce for mopping. Overall I liked the results using Fogo, I had a few lumps that did not burn, I will use again, not sure if I like better than Kingsford Professional which I use in my pbc

That's a bummer to hear. I've always heard that FOGO stuff is incredible but it's so pricy I haven't had the nerve to try it. I appreciate the feedback because you may have saved me some money.

Was the 275 degrees at the grate or was it a dome reading?

Glad to hear. Did a dry run on the SAS we traded for and works well. I'm pleased it has worked for you. It's a good day that the wsm has a good home.

Ok, I'm going to take the plunge and ask, What is Fogo?

CeramicChef 's favorite charcoal. I'll try it after I go through a couple of bags of kamado joe charcoal in my KJ classic.
            best regards,
            Jim
