    Stained fat cap on Brisket.

    Hello everyone!

    I recently made a trip to my local Costco, and to my surprise they are now carrying full packer briskets, USDA Prime! Well obviously I had to get one at $3.29/lb, right? Right.

    Anyway, I picked out a nice 14 pounder and brought her home. As I was putting it in the refrigerator I noticed a hot pink stain on the fat cap. I'm not sure if this is normal, as I've only purchased 2 packer briskets before. Should I bring it back? Pictures below, not sure if they do it justice though.

    Possibly remnants of a hematoma since that is the skin side. I wouldn't worry. I only worry when the entire brisket, especially the meat side, is turning really bright pink. That is indicative of a busted bag. I tend to shy away from those.

      Certainly does not look worrisome. Most likely a little residual blood pigment (hemoglobin) or muscle pigment (myoglobin). Maybe a little bruised area? Nothing to worry about. Enjoy!
