    Beef Rib 4 Bone-in (Splitting & Trimming Q's)

    So I have this premium grass-fed beef short ribs 4-bone in, weighing 8.5 pounds.

    My first concern is, should I split the ribs into 2 parts, Meathead says it will take a lot longer. Considering im using a COS and its a struggle that I try to enjoy.

    My second question is whether or not I should remove the membrane under the bones, or just slash them?

    Double ribs have an extra two sides of bark and singles even more - if you like that. I never removed the membrane, but I do slash them. However, I'm no beef rib expert and I'm sure you will get plenty of advice here.

      I split them into pairs. Follow Meathead's method for beef ribs and you cannot go wrong! Click image for larger version

          Don't take the membrane off the back ... the meat and bones will fall apart if you do. Do score it, though
