1st brisket in a LONG time

    Cut in half and placed in the electric smoker some where between on and off and wrapped in uncoated white butcher paper. I injected with the dribblins in the pan under the fat Looked like a nice medium rare when I stuck it in the low end Masterbuilt uninsulated anagloge thermostat controled "electric smoker". I'm hitting the rack. Update in 8 or 9 hours or when ever I feel like getting up

      Judge my fat ( said no women ever) .. I have screwed this up 7 ways to Sunday compared to "the book" and not just Meatheads book, anyone who has ever cooked BBQ's book. I will post pics when I sleep this one off and it will still be better that the chain q joints.

          rat88 ... Napping during long low & slow cooks is important. One must stay properly hydrated too. It's best to keep a half of a rack of beer nearby.😋

            Me and this dam electric smoker aint getting along. I cant get it to 300. I gave up on it and put it in the oven with a little water and a fresh coat of hot wing sauce. 20 hrs into the cook and I cant get the IT above 150. This is either gonna be really good or really bad.

            An hour and a half at 350, half hour at 300. the flat is up to 205 the point is running 195. Will hold it here for another half hour at 225

              Probe test that point for tenderness... It might be done already.👍

            All wrapped and resting. Point was tender but still had a good chew and real good flavor
