    Ribs for the 4th

    I am doing beef short ribs & full slabs of pork ribs for the 4th how, much longer will the beef ribs take than the pork? or if I put the beef ribs where it's about 12* hotter than where the pork is will they take the same time. I will be using my ugly COS that is insulated & has the Auber controller on it (photo attached). Any one have experience doing this or something similar? Any help is greatly appreciated.

    Spares might take 5 hours. Beef ribs might take 10-12 hours.

    Hotter temp will speed either. Crutch through the stall might speed the beef ribs by several hours. But might hurt bark.

      I should note, these are just estimates. Every cooker cooks differently. PBC's particular configuration leads to faster cooks, as I understand. My Genesis's configuration might lead to slower cooks. Might.

    I run 250-260 F in my "Auberized" & modified COS. Big 4 bone slabs of beef ribs run 6-8 hours (unwrapped). Pork spares an hour or two less at similar temps. Never done them at the same time. Good luck.

      Thank you, It sounds like we have about the same setup. I have lot,s of room so I thought I would try doing them at the same time.
