Boy that flat really slides down that point when you take that intermuscular fat out.
On my last cook I separated the muscles then reattached with the hooks. It helped me pull the flat up higher so I wasn't so close to the coals in the PBC.
Just get the Non-corrupted pictures of the finished product Louisiana Man.
