I just ate breakfast, and my mouth started watering as soon as looked at the photo. It's a good thing the Supreme Court ruled that porn is protected because your photo is the most flagrant food porn I have seen...

Seriously DWCowles I was just fine with the small piece of salmon and 1/2 slice of toasted sourdough I just ate. You wrecked me. That looks awesome. "Hey lets just add meat to the cheeseburger, ok I'll make a brisket." I'm dying. Isn't chopped brisket on a sandwich an east Texas thing?

HouseHomey its a whole Texas thing I live up in West Texas (lower part of the pan handle) its a BBQ staple here as well. (it takes a little bit of meat and makes it go a long way!)

I found some great Sirloin and got a full brisket (was going to use part of the flat) wanting to grind the two together to make Hamburger but that idea seems better to me, just layer them!!

GadjetGriller I've been working on a burger grind for quite some time. I found the sirloin in the burger to be very tasty however I was having to re-create the other two meats (at that time I had 3 cuts) to make up for the texture But sirloin is not a bad idea for a burger. Of course others will argue with me that there should only be ground truck or you need brisket or it has to be some kind of Mix . But I think it's just a personal thing. Remember what meathead said about rules?

I was under the impression that central Texas was a slicing are and east Texas chopped their brisket for sandwiches. In general, not exclusively.

you may be right HouseHomey I remember as a kid that sliced beef sandwiches were more expensive than chopped beef. I asked why once they told me Sliced was the fresh stuff and chopped was all the bit and pieces that was left over from the day before, all chopped together.

(Part 2) Now however they ask which you want and then slice it fresh in front of you and if you want chopped they pull out the cleavers and chop it then and there. The 2 sandwiches cost the same now.
