OK, maybe you can get marinades and spices in farther but the likelihood of browning the area you scored is not good...but I think the odea of overcooking that area is high! And of course pushing in any surface germs that would have been killed by high exterior heat so now to safely cook would require overcooking...

We had some friends over last week for pulled pork, After taking one bite, the wife asked if I could do that with beef. I said sure. She then invited us over for dinner - all we have to bring is the shredded chuckie. I said I'd love to do that.
