I use it to sear venison steaks. Yumm!!!! Or to brown venison roast prior to braising, or chunks prior to stew. Most of the red meat I eat that isn't Q'ed is venison. A little beef fat for an otherwise very lean meat is GREAT!!!

I use it to add into meatloaf, chill or adding to a skillet. I have a lot now though. So lately, I have been pitching it.

What would a person use the rendered fat for?

Yup, render it if my supply is short, otherwise it goes in the bird feeders (which also ends up feeding the local raccoon population).

Food for the local "wildlife" that will feast on such an abundant supply of lipids.

I pitch it. I guess I could render it and make something from it; soap? But I really get more than enough fat in my diet in all the wrong ways already.
