ID:	1036032 I'm not sure what is going on with this steak. That one half of it looks like wagyu, but the fat isn't that soft buttery fat of wagyu; instead it has more of a suet feel. I think for 12 bucks it's still worth a shot, Wegmans usually has pretty good meat regardless. Even their choice is usually pretty good. Does anyone have any ideas as to why this piece looks like this?

    Okay. It’s called "callus eye", and it happens when an animal is injured, and the muscle is replaced with fat as it heals. Unfortunately it is usually tough and chewy.

    I guess I’ll trim that part off.

      SV it maybe for 2-3 hours vs the 60-90 minutes I usually use for a NY steak.

    Looks like a NY strip (i.e. loin). Looks tasty anyways!

      I’d eat it,,,,,with a beer and maybe finish it off with a bourbon if necessary
