Tomorrow's project. Canned pork and beans

    Both of my parents grew up on farms, and both grandmothers canned or froze a ton of stuff every year. They even canned fresh sausage patties.

ID:	624036 Well here is the progress so far.. soaked the beans for about 7 hours in water.. then heated to a boil for 10 minutes.. let sit for an hour.

ID:	624042 fry the bacon and set aside to slice.. cut up onion and fry in the bacon grease.. combine all other ingredients( I will post) in sauce pan.. cut the bacon into pieces and add the sauce pan. When the onions are done pour onions and grease into sauce pan and stir..

ID:	624046 rrinse the beans and put back in stock pot.. bring to a boil then add ketchup bacon onion mix to stock pot and simmer for 20 minutes..

          Ladle into jars.. try to get as much beans and bacon at first then fill to within 1 inch or so of headspace .. put lids on and into the pressure canned it goes.. Click image for larger version

              Here is the finished product. Next time I would only fill jar 3/4 full with beans and then top off with the juice. The beans absorbed more liquid than I thought they would.. Click image for larger version

                      Here is the recipe again.. my kids liked them but like as much as I thought.. I might try to add a cup of maple syrup just to sweeten up a little more.. wife and I thought they were really good.. Click image for larger version
