            An, among th MANY benefits of doin oven bacon; ya jus drain off th grease into yer bacon grease can, (yall do have a bacon grease container, right? ), an throw th parchment paper in th trash.
            Quick suds n rinse, an yer sheet pan, cookie sheet, etc., is good to go, fer next time... No scrubbin n scrapin...

              I eat all of one black eyed pea a year. My wife considers it good luck to eat them on 1/1 so I eat my obligatory one pea per year and I have to tell you, I hate them.

              However, looking at how Mr. Bones makes them I might have to try them with a more open mind.....if I can get my wife to prepare them the same way. Probably not going to happen, more than likely I'm destined to be a pea hater for life.

                I let em go another ~45 minutes, to achieve my desired results.

                Please note, ya always oughtta add a dab, or two of water, when ya reheat beans, chili, etc. A Dab, or two, mebbe a tablespoon, two, per bowl, then into th nukerator...use yer eyeballs, an try not to dilute it, accidentally

                Done Test.
                (Jus kiddin, but a good example of finished results:

                Spoon stayed like that, several minutes, while I was takin pics...an til I removed it.

                Woulda stayed there til I got home from work today, but beans needed to sit in Th Cooler, an think about things, overnight...

                  Now, I'm sure yall have heard me mention (curse) th tiny lil ~10-12 cf ), 30+ yr old icebox that my lil duplex has...

                  Well, this time of year, at least I have an alternative...

                  High yesterday was ~19°, an my motor garage was a cooly-breeze 34°, when th black eyed peas was done, around 0230, this mornin...

                  I rigged up a makeshift 'trivet', an set th DO fulla beans out there, to spend th night in solitary...

                    Looks great, Bones, but where's the cawnbred? I guess you're makin' it later, right?

                    BTW, what brand of bacon do you favor. My favorite is Wright's Hickory Smoked, but Hormel Black Label is good, too.

                      Re: Bacon brands... Wright's is very good stuff, same same with th Black Label Hormel, an often found in my larder.!!!

                      I frequently buy HV or Sprouts thick sliced smoked bacon, from outta th butcher case, as well...really good stuff, usually ~$4.99 / lb, also can be had on sale, at times
