The only beans I soak over night are navy beans. A true cajun red bean should be brought to a boil in water or chicken broth then removed from the heat and let stand for 30 to 45 minutes. Then continue your cook from endless recipes. I usually cheat with store bought Bayou Majic red beans. They come with a season pack. Add sausage 1/2 way through the cook and enjoy.
