I've made this a couple of times. Last night I simplified the recipe to the max
1/2 pound bacon cut into 1/2-1/4 inch pieces
cook in heavy skillet on low heat until golden brown and crunchy lift out to drain on paper towels
1 Tablespoon of bacon drippings (save or discard the rest)
Chop one small onion and one clove of garlic peeled. Sweat until clear and soft
Add:
1/3 cup apple cider vinegar
1/2 cup maple syrup
1/2 orange juiced, squeezed fresh
2 tablespoons brown sugar
put the bacon back in the pot.
Cook down until as thick as you want it.
Add Ground pepper and a shot of whiskey. I ran the immersion blender to grind it fine.
I plan on adding this to my pulled pork sauce this weekend at the contest in Sheridan, AR. Last year, I won 1st in pork. Want to do it again!
