    Here's my Christmas 2018 dinner meat.
    I followed Meathead's recipe precisely.
    Cooked on my 5 year old Blazin Grill Works Grid Iron pellet grill. (http://www.blazngrillworks.com/)
    Bought a Choice Whole Boneless Ribeye Loin (17.5 lbs) at local Fareway store for $8 lb 8 days before Christmas.
    Trimmed almost 5 lbs of fat.
    I cut the loin in half (both a little over 6 lbs after trimming).
    Tied with butcher string to make two 5" round pieces.
    Salted both pieces for 40 hours.
    Used about 1.5 lbs of the fat with meat on it for Meathead's gravy that I made inside the day before.
    Outside air temp was 45-47 degrees, hardly any wind while cooking.
    Cook time at 225-250 degrees was almost 4 hours to hit 115.
    In colder weather I always cover my factory insulated Blazin Grill Works Grid Iron with a welding blanket to help maintain the heat.
    To reverse sear, I swapped out the primary drip tray with the drip tray designed for searing right on the pellet grill. Cranked the heat to high hitting temp around 425.
    It was hit with the family. Enjoying some leftovers this week.
    This was the fourth time using Meathead's recipe on my Blazin Grill Works Grid Iron pellet grill.
    Got the best crust ever this year.

      A little late but here's some things from the Christmas menu. First up is a bagna cauda. It's a family tradition that started with us 40 years ago in Clinton, IN. It's a cream bagna cauda recipe given to my mother back then. The Wikipedia page for bagna cauda doesn't mention there being a cream version even though it does mention Clinton, IN and the first picture is of a cream version. Anyway her is some served with bread, cabbage, green pepper and fennel.

        My wife and younger son are on a flight to Rome today, so it was just me and my older son, who is home from college for winter break. I had a vacuum-sealed package of chuck that I'd ground - so burgers and potatoes was our simple dinner on the Jumbo Joe.

        My Daughter brought home her Instant Pot for Dad to try. Smoked some pork shoulder on the Weber Kettle using the SnS and seasoned with some of the rub Elton's BBQ gave me for Secret Santa Gift. Six--1# chunks Smoked to about 150* and put in the Instant Pot for 45 Min on High Pressure. Turned out good. I might try Beef next time!

        Our Christmas lunch was the bomb! Holy umami that was good! 16 lb upper choice prime rib dry brined for 12 hrs and rubbed with chopped garlic, course ground black pepper, fresh rosemary, thyme, and EVOO wet rub. Cooked for 4.5 hrs at 225 F to 120 F internal on YS640, wrapped w/ foil, and into faux cambro for 1 hr. Seared with Yoder set to 495 F on GrillGrates turned upside down positioned directly over fire pot with the 2 piece diffuser door removed. Russets cooked at same time to take advantage of the extra oven space. Edge to edge medium rare, YS 640 for the win!
