    My oldest son is home from college for "Spring" Break. So we planned the week's menu to include some of his favorite dishes. Up until 2 or 3 years ago he didn't like steak (his younger brother still doesn't) but he all-of-a-sudden loves it. So, when my wife and I were at Costco last Friday and saw some beautiful tomahawks for $9.99/pound, we did what we needed to do. From a scheduling standpoint, last night was the only feasible weeknight (maybe Friday) for me to cook them. Of course, it was 13 degrees outside with a gusting wind that had a chill temperature of -5. The wind was the real issue and it made even lighting the chimney very difficult. In the WSM I cooked the tomahawks, foil-wrapped mushrooms and a couple of brats for my younger son. On the Jumbo Joe I cooked brussels and carrots. Here is how I ended up dealing with the wind:

      I saw this several days ago and liked it, but I kept thinking about how good it looked. It has given me the push to do some homemade pastrami on my own, something I haven’t done before.

    I tried to cook 3 things on my GOOR today. One turned out fantastic, one was good but not what I expected, and one was a total flop!! Everything everyone posts looks amazing so I’m gonna shake things up a bit.

    First the yummiest....salmon! I grill salmon almost every week on the gasser but this was the first time I ever smoked it. One hour at 225...fantastic!

    Next, the “OK”... my first time to try pulled beef! Well, let’s just say this will be a work in progress! I used a recipe from a different source. The flavor is good but it is safe to say I got a workout “pulling” the chuck roast! After fighting with it, I looked up the recipe here and see the problem. I didn’t wrap it at 160, I let it go to 203 at 225. I guess this is a good excuse to fire it up again!

    Last, well I think I invented shrimp jerky!! My recipe said 30 minutes on the smoker. I checked at 30 minutes and it didn’t look right to me. We grill shrimp all the time on the gasser and it never looks like what I saw today, so I left it on. Checked it later and left it longer. Got my husband to try one with me. Couldn’t get the darned peels off for one thing, then had quite a chew with the little buggers!! We always peel shrimp to grill them and IF I try to smoke them again I will definitely peel them first. It WAS pretty tasty jerky...

      I've cooked Gulf shrimp about every way possible I think. You hit the nail on the head, shrimp protein needs a higher heat to cook it. And I use "cook" it lightly. It just needs a few minutes to go from opaque to pink and delicious. A minute longer and it's shoe leather. Keep it moist by basting also helps. Everything else, especially the salmon, looks amazing !!!

    Thank you to mgaretz and SwampDonkeyzBBQ! Smoke two racks of spares, one blasphemy style and the other wrapped in bacon. Prob shoulda pulled em a bit sooner, but...amazing anyway! Seasoned with SPG & honey powder, topped with MMD. Glazed with Head Country Apple Habanero near the end.

    Intrigued by @RobertC’s post “In defense of “junior” sized 14” drums, when he casually mentioned a ballotine chicken, down the YouTube and Google rabbit hole I went. When a friends wife was hospitalized and I had an extra turkey in the freezer, I decided the time was time was right for a ballotine turkey. Found a couple YouTube videos and went for it. Need a little more practice deboning but otherwise satisfied with the results.
