    Flank steak cooked on my Weber Kettle. Half seasoned with Big Bad Beef Rub and half with Spiceology Black & Blue rub. Still trying to decide if I like the Black & Blue on beef. Seems like it would go better with chicken but it was still very good. Flank steak was from Porter Road and it was excellent.

    Made pastrami tonight. Iโ€™ve smoked corned beef before, but this was my first time making corned beef myself. Served with sous vide German potato salad, a habanero dill pickle, and a German bratwurst (because my daughter wonโ€™t eat beef ๐Ÿ˜ž).

    The Egg has had a workout this week. Cured pork belly into Maple Bourbon Bacon then smoked it to a nice finish. Then sliced a slab into nice thick strips, rubbed with brown sugar and baked to a beautiful candied morsals, drizzled with an apple cider glaze. Then the Meathead Method Prime Rib Roast. What a meal!!!

    Smoked Chuck Sandwiches... dry brined with AP rub and cajun seasoning overnight. Brought up to 165 degrees and then wrapped with pink butcher paper to finish to 180 degrees. Very tender, juicy, and tasty. Click image for larger version

      Blistering 3 degrees here in Colorado so I figured Iโ€™d do a turkey dinner. The Smoke Vault kept a good range of 310-330 degrees. No wind helped; my shoes freezing to the patio every time I went outside did not.
