    Hammered by rain recently, so planned to cook inside for Valentine's Day.

    Working on two pork shoulders. Injected and dry Brined Wednesday night. Rubbed and stuck in the pit about 3 hours ago. Will be served with slaw, bourbon baked beans, smiled bacon mac & triple cheese, and dulche de leche monkey bread tomorrow at 1830 to some of my employees. Sweet tea, Scotch, or Tennessee whisky to drink.

    Reducing the sauce for the butts. This is my version of KC BBQ sauce. Too sweet for me, but that flavor has taken over the world. I like Texas style, and vinegar and chili sauces.

    Saturday is seafood night. Marinated swordfish steaks in olive oil, lemon juice, garlic and rosemary. Grilled and served with stuffed artichokes.

    Chicago style deep dish in a 12” cast iron skillet. Sausage only on 1/4 for my daughter, the rest was sausage, mushrooms, peppers, and onions.

      The kale salad was terrible BTW. He's on a diet where he's not supposed to eat salt or oil. Luckily he was at my house where there was decent food available.

      Thanks texastweeter. fzxdoc - cooked them on the grate of the PBC with the lid on but cracked, flipped them a couple of times along the way. Spinnaker posted the Trader Joe's Chili Lime Rub and I copied his idea. It's a nice little rub and only $1.99. I got the PBC in early January and the cover hasn't come off my Kettle since. I'm feeling guilty about neglecting her but having a blast with the PBC

    While at the store looking for something to smoke, nothing was exciting me... So I went a different route. The plan was to make some smoked garlic and peppers hummus. When I saw the price of Tahini the plan quickly changed.

    I bought hulled sesame seeds, fabricated a foil tray which I perforated with a safety pin. Mixing every 30 minutes for about 2.5 hours with the MAK on smoke (roughly 170 degrees). A bag of sweet pepper with a single slice long ways went for half the ride and 2 cans of garbanzo beans went for the other half in the same tray.

    Here's where things get difficult, if you have a food processor this would be much easier, in my case it took a lot of tipping the blender and stopping to scoop sides until I got to the oil part. Sesame seeds into the ninja until as fine as possible, then used avocado oil but olive is the traditional choice. Blend and add oil until the tahini is pourable.

    Here you can follow whatever recipie, but I used 4 cans total garbanzo, olive oil, salt, cumin, paprika, a lot of chopped garlic, and seeded most of the peppers (I ate almist half the bag before they made it in the blender). Finally add lemon juice to taste, if you can't get the blend smooth add small doses of water or a touch more lemon juice. I mixed in some chopped chives for added color at the end as well. Final product was wife approved.

      theroc it had to be done, the store wanted $17 for 1 cup of Tahini. I paid $6.50 for ALL the ingredients I used here if you don't count the oil and garlic which I already have in bulk. Wife says it's pretty smokey, but to me it's just a background flavor. We both agree it's great though
