    Well I didn't have to cook the main SB meal only an appetizer, so I made what I had eluded to, the Malcom Reed inspired cluionks. The combination of chicken (cluck) wrapped with bacon (oink) is always a crowd pleaser. Since football for me is literally over (and the Stuper Bowl totally underwhelming), I went for a baseball theme with the advent of opening day in the MLB coming this April 1st.

    Soo, I took some chicken legs, lollipopped them, seasoned and wrapped them in bacon, representing the bats. For the baseballs I rolled some boneless, skinless chicken thighs around an inner core of a jalapeno pepper stuffed with cream cheese, all of course bacon wrapped as well.

    ...and of course cooked them at about 450* with the good old vortex on the Weber basting with my Woody's/Italian Dressing sauce ....

    ....they turned out mighty tasty, were quickly gobbled up (wish I had made more but very labor intensive). At least they were better than the game

        We are eating healthier these days which does not mean boring. This 600 calorie meal was delicious. Cooked pork chops sous vide last night at 140 degrees for 2 hours. Then a hard sear in CI skillet and drizzled with a store bought caribbean mango sauce. Served with asparagus and jasmine rice sprinkled with Tajin.

        My wife requested chimichurri and skirt steak for her birthday, one of her favorites. This tunes out to be one of the best I’ve done. The beef was wonderful, came from Windy N Ranch from Crowd Cow. A perfect combination of flavors with a little char on the meat from a smoking hot grill.

        Had 2 days of great weather. It ends Wednesday. But got to 2 cooks in. Sorry, I forgot to get last nights. Started with the cold smoke (hickory pellets) some cheese (picture included of the smoke). Got that. Made crispy chicken wings for last night's dinner ( no pictures). Turned out really good. Then tonight did a Boneless NY Strip Steak. Just dry brined for a couple of hours and coarse pepper prior to on the grill. Indirect for about 1/2 hour to 110 smoked with cherry wood chips. Off the grill then painted with avocado oil. Back on grill direct high heat for reverse sear. To 135 (med rare). Red potato soaked in salt, pepper and smoked paprika. On grill for 20 minutes.           Nope, we're feeling good. But it snowed last night for the first time this season. So a little walk in the snow for veggies was in order and that led to chicken soup in my belly.

        Troutman Here’s some beef for ya

        flat iron pan seared to a perfect 125* served with a wonderful mushroom cream pan sauce. Got the pan sauce from Seriouseats.com

        I tell ya, I’ve come miles making mushrooms for myself! But this was wonderful! So much flavor, using dehydrated mushrooms and turning the leftover “stock” into my pan sauce.

        I should have taken a pic of the sliced steak as it was perfect edge to edge.

        Another cast iron cook gone well!
