    Returned from a week on the road yesterday and was in need of something good to eat. Picked up three large pork chops, sous vide for one hour, then seared on a ripping hot plancha on the Weber. So good. Served up with sauteed shitake mushrooms and gratin potatoes. It's good to be home!

ID:	622492 SRF wagyu New York steak I picked up at my grocery store. A $30 steak, but it was 1 1/2# and I’d pay a whole lot more for two steak dinners at a nice steakhouse. Cooked sous vide at 131 for two hours, then seared on the kettle. Sliced on a board sauce of parsley, thyme, garlic, olive oil, and red wine vinegar.

        Tonight we had all the kids and their significant others over, to put wedding programs together with 7 days until my son's wedding. Of course I fed them. For this crowd, it was smash burgers using the "Wimpy burger" recipe from AR. I think I made about 40 of those babies. We ate a lot, and I sent a lot home for the kids to have tomorrow.

        Made carnitas, bbq style in a way. Used Meat Church’s Deez Nuts rub and cooked carnitas style. Then, loaded up a baked potato! Really good stuff!

          It was a beautiful day here in the Black Hills of South Dakota! Perfect January weather to smoke a 10 lb Bone-In Pork Butt on my Weber Kettle w/SNS. Mmmm......pulled pork with a loaded baked potato and salad. We don't need no steenkin' buns....

          Beef and pork through the smoker last 48hrs! Very happy with the ribs, caught a little when caramilising under the grill. Brisket itself was a cracking bit of meat but I missed my temp alarm, it went through to internal 207F 😮 so the flat was a little on the dry side. Point was out of this world though! Used Meathead's pork and beef rubs and finished the ribs with my own BBQ sauce.

          Home made stuff!

          From left to right: quick pickled red onions, Meathead's KC BBQ sauce, a Blueberry BBQ sauce that goes GREAT on pork, and Meathead's Columbia Gold BBQ sauce. They were served with smoked pork BB ribs, ham, Elgin sausage, and chicken parts.

          First cook with the PBC! Got a PBC for Christmas (Yay!); two days later I got going with my first cook. I halved two chickens, then used PBC all purpose rub on one half and Meathead's S&G rub for the other half. It all came out great. The birds were super juicy and tasted great. Also cooked some corn on the cob using the foil hanger trick from the PBC website.
          Photos of the finished product aren't great. I'm always too excited to dig in to remember to take better photos.
